Dark Chocolate Macadamia Nut Cookies

These may be the best cookies I’ve ever made. Actually they might be the best cookies I’ve ever tasted! Seriously, I don’t have a big sweet tooth. I can pretty much eat one cookie and I’m set. These were gone by the end of the next day.

Dark Chocolate Macadamia Nut Cookies
Adapted from The Best White Chocolate Macadamia Nut Cookie Recipe
Yield: about 18 cookies

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 1 egg
  • 1 1/4-1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup bittersweet chocolate chips(or chunks)
  • 1/2 cup macadamia nuts, chopped
  • pinch salt
  • cinnamon
  1. Preheat oven to 375 F
  2. In a large bowl, beat butter, sugars, and vanilla until creamy.
  3. Add eggs and salt and mix well
  4. Stir in 1 1/4 cup flour and baking soda. Add a little more flour if it looks too wet.
  5. Stir in chocolate and macadamia nuts.
  6. Drop spoonfuls on a parchment lined baking sheet
  7. Bake about 10 minutes (remove when edges are golden brown and you’re not totally sure the center is done)
  8. Remove from baking sheet to cool*

*This is where I would say to cool them on a wire rack, but I don’t have one so I just put them on a plate. Nothing terrible happens, although they sometimes stick together a bit.

Snickerdoodles

1 cup shortening
1 1/2 cups white sugar
2 eggs
2 3/4 cups sifted all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1/2 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon

1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
2. In a medium bowl, cream together the shortening and sugar. Add eggs one at a time, mixing after each. Sift together the flour, baking soda, cream of tartar and salt; stir into the creamed mixture until well blended.
3. In a small shallow bowl, stir together the 2 tablespoons of sugar with the cinnamon. Roll the dough into walnut sized balls and roll the balls in the sugar mixture. Place cookies 2 inches apart on the prepared cookie sheet. Bake for 8 to 10 minutes in the preheated oven. Cookies should be slightly golden at the edges. Remove to cool on wire racks.
